My dad just bought me the Ninja (an awesome food processor) and I had to try it out, so I decided to make my own gluten-free bread crumbs and got creative!
Ingredients:
1 pound chicken strips
1 cup cornmeal
1 cup pecans, crushed
1 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon pepper
1 1/2 tablespoon olive oil or canola oil
1/3 cup buttermilk
Directions:
Preheat oven to 425 degrees F. Coat 9x13" pan with oil and place aside.
Place all dry ingredients (everything but the chicken, buttermilk and oil) in the Ninja or another type of food processor and blend until finely chopped. Pour mixture into a large plastic baggie that will be able to hold the chicken for shaking.
In a medium mixing bowl, coat the chicken strips with the buttermilk. Take coated chicken strips and place into plastic baggie with mixture, seal, and shake to evenly coat chicken strips.
Line chicken strips up on oiled pan, place in oven and bake for 15 minutes, turn strips over and bake another 15 minutes, or until crispy.
Remove from oven, serve and enjoy!
