My great grandmother from Italy always used to make escarole and bean soup, and to this very day, it is my favorite comfort food.

Ingredients:
1 head escarole
1 can cannellini beans
1 cup yellow onion
1 stick butter
4 cups water
2 cups vegetable broth
3 garlic cloves, minced
1 teaspoon Mrs. Dash Original Blend
salt to taste

Directions:
Cut up escarole into salad sized pieces. Cut yellow onion into strips about 1 1/2-2'' long.

Place escarole, onion, minced garlic and butter into large saucepan and saute on medium low heat until onion is transparent.

Add cannellini beans, water, vegetable broth, and Mrs. Dash Original Blend. Stir gently, and let simmer on low heat for approximately 20 minutes. Add salt to taste.

Serve with Italian bread and enjoy!
