Top with your favorite fruit and these bars are sure to be a huge hit!

Italian Cheesecake Ingredients:
1 1/4 cup sugar
3 cup Ricotta Cheese
6 medium eggs
3/4 cup flour
2 tablespoon vanilla extract

Crust Ingredients:
2 cup graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted

Directions:
Preheat oven to 325 degrees F. Mix the graham cracker crumbs, sugar and melted butter directly in a 9''x13'' baking dish (no need to dirty any extra dishes!), and pat the mixture down using your hands or a fork to cover the bottom of the baking dish.

In a large mixing bowl, combine the sugar, Ricotta cheese and flour. Add the eggs and vanilla and mix well. Pour the cheesecake mixture on top of the graham cracker crust and spread evenly.

Bake at 325 degrees F for approximately 1 hour 15 minutes to 1 hour 30 minutes, or until baked all of the way through using the toothpick trick (toothpick comes clean when poked in the middle of the bars).

Top with your favorite fruit, chocolate, nuts, etc... or just eat them as is! They are true Italian Cheesecake Bars, as they use Ricotta cheese, and they are delightful!
