I love this salsa! Need I say more?
2 (14.5 ounce) cans Del Monte no salt added diced tomatoes, drained
1 cup mango jam
1/2 cup red onion, minced
4 cloves garlic, minced
1-2 tablespoon crushed red pepper (I like 2 tablespoons, lots of spice!)
fresh coarsely ground pepper to taste (I use 2 teaspoons)
1 teaspoon fresh cilantro, chopped fine
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon lime juice, or squeeze of one slice of lime
Mix all ingredients together and refrigerate for at least 1 hour before serving for best results. This salsa is delicious on baked tortilla chips and accompanied by a frozen margarita (alcoholic or non)!
