This timeless combination of vegetables is absolutely delicious when paired with homemade Toasted Sesame Ginger Dressing, and the best part is that there is very little to no sodium!

Salad Ingredients:
3 cucumbers, peeled and sliced
2 cups grape tomatoes, cut in half
1/2 onion, diced small
Dressing Ingredients:
1/2 cup vegetable or canola oil
1/2 cup rice vinegar, unseasoned (has little to no sodium)
2 tablespoon sugar
2 tablespoon sesame seeds, toasted (toss in frying pan on medium and stir continuously until browned)
1 heaping teaspoon ground ginger
dash of garlic powder
Step 1:
In medium sized mixing bowl, combine all salad ingredients.
Step 2:
In small mixing bowl, combine all dressing ingredients, mix until sugar has dissolved and dressing is well blended.
Step 3:
Pour dressing over salad and toss until salad is well coated. Chill for approximately 1 hour before serving.
*Hint: the longer the salad marinates, the better it tastes! If you can wait to let marinate overnight, I suggest you do so. You will not be disappointed!
